Bomba is the oldest rice variety in Valencia (Spain). Short grain, almost spherical, with a central pearl. If raw, the grain is small; after cooking, it doubles its volume, absorbing all the flavours! It is the most resistant, and must be cooked according to its hardness, minimum 20 min.
