UBRIACO AL VINO ROSSO (DRUNK) – is a semi-hard cow’s milk cheese from Italy’s Veneto. The cheese wheels are soaked in red wine, such as DOC Rosso Venezia. This method, known as “ubriaco” (meaning “drunk” in Italian), enhances the cheese’s flavour. Mild, sweet taste with hints of wine, especially near the rind.
