Filotea

Filotea is an artisan pasta maker from the Marche region in central Italy, founded in 2005. Their signature egg pasta is crafted using a traditional recipe with durum wheat semolina, soft wheat flour (00), and fresh eggs. The pasta is slowly dried at low temperature, giving it a rough, porous texture that clings to sauces.
