Sweet Breakfast Polenta

So simple and succulent. If you feel like changing your breakfast routine or just satisfying your sweet tooth, creamy polenta is a way to go. It is a great alternative to warm breakfast porridge and topping options are endless.


  • 1/2 cup coarse polenta

  • 3 cups cold water (divided)

  • 1 cup whole milk

  • 3/4 tsp salt

  • 1/3 cup brown sugar

  • 1 tsp vanilla extract

  • pinch of cinnamon

  • fruit compote


  1. Put the polenta in a small bowl. Top with 1 cup of cold water and stir. Set aside.
  2. In a medium saucepan add the remaining 2 cups cold water and 2 cups whole milk. Bring to a low boil. Add salt and stir. Slowly add the polenta and water mix then using a mix stir any possible lumps.
  3. Turn the flame to low and simmer the polenta, stirring frequently until the polenta has thickened. Once thickened, add sugar and vanilla extract. Sprinkle some cinnamon (at your preference).
  4. Place polenta in small bowls and top with some additional milk and brown sugar if you like. Also, fresh fruits or fruit compote can be paired with this warm cornmeal porridge.
